With a month of winter still ahead of us, now is the time to sample some of Midland’s best soup options, though if you ask us, every season is soup season.

Noodle House
Hand Pulled Noodles.
Looking for a ramen place in Midland to try out? Hit up Noodle House in Central Midland for one of their house-made noodle bowls. The ramen, both beef and chicken, come with noodles crafted before your eyes. The attentive staff contributes to a welcoming atmosphere and it’s an unexpected culinary gem in town.
The spicy beef noodle soup is deliciously cooked, with thinly sliced pork boasting a perfect blend of fat and lean meat, and enough broth for two bowls.
Pro tip: Their dumplings are raved about as well, order a side (or two).

Mulberry Cafe
Timeless.
The combo of Tomato Basil and Grilled Cheese is classic for a reason, the only real question is: “To dunk or not to dunk?” We vote dunk. This crowd favorite is offered daily at Mulberry Cafe, along with their equally popular Enchilada Soup. Need more? In addition to the above, there is always an additional Soup of the Day to choose from. Talk about spoiled for choice! With their large selection of fresh salads, it is easy to meet your health goals here. Plus you can choose from wraps, sandwiches, burgers, and coffee.
Pro Tip: Find it on the ground floor of Frost Bank where the former Taste 508 was located.
Thai House
Spicy and Savory.
Thai House offers a curry menu with a mix of delicious options that cater to different tastes. If you're into spice, the Red Curry with its bold chili pepper flavor might be your pick. The Green Curry is a zesty mix of green chili, Thai basil, and kaffir lime leaves for those who prefer something refreshing. Try the Massaman Curry for a rich blend of coconut milk, peanuts, and sweet potatoes, and carrots.

Hand Cafe
A bowl you can eat!
Whether you are looking for a space to knock out some work, get caffeinated, or grab a quick meal, Hand Cafe has you covered. Their rotating soups change every few days with guest favorites being jalapeño cheddar, baked potato, tomato basil bisque, and clam chowder. For a special treat, you can transport yourself to San Francisco for an hour by having any soup served in a bread bowl.
Dietary restrictions are also covered with the recently added paninis that include one with meatless meatballs. Gluten-free bread is always an option for your sandwiches.
If you have littles, take advantage of their outdoor play area, a massive slide, and children’s book corner. Whatever brings you to Hand Cafe, do not walk out without a churro donut or two, which brings us back to our original question: “To dunk, or not to dunk?” We say, grab yourself a latte and get dunking.

Sapporo Ramen & Grill
It’s all about that broth.
When asked why Sapporo Ramen & Grill became a favorite in Midland so quickly, owner Lily Chen said it all boils down to the broth. Each of the four different batches takes 10-18 hours of simmering to complete. There is vegetable broth as well as chicken, pork, and beef. The long and slow cooking process of the meat-based options results in a nutritious bone broth which many patrons choose to purchase for its rich supply of vitamins, minerals, and collagen.
A crowd favorite is the Spicy Tonkatsu Ramen consisting of BBQ pork, marinated egg, baby spinach, bean sprouts, black mushrooms, nori, and pork broth. You can also personalize your dish by adding additional garnishes like eggs, kimchi, seaweed, extra meat, and the always popular chashu (pork belly).
Pro tip: The eleven different ramen are served with flour noodles, but rice noodles can easily be subbed for a gluten-free option.
